Banana Cupcakes
Ingredients
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas
- 1/4 cup buttermilk
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- FROSTING:
- 1/2 cup butter or margarine, softened
- 2 1/2 cups confectioners' sugar
- 3 tablespoons milk
Directions- In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full.
- Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely. In a small mixing bowl, cream the butter, sugar and enough milk to achieve desired spreading consistency. Frost cupcakes.
Pork Empanadillas
Pastry
- All-purpose flour -- 3 cups
- Baking powder -- 1 tablespoon
- Salt -- 1 teaspoon
- Lard, shortening or oil -- 1/4 cup
- Milk, water or broth -- 1/2 to 3/4 cup, as needed
- Oil -- 2-3 tablespoons
- Onion, minced -- 1
- Garlic, minced -- 2-3 cloves
- Ground pork-- 1 pound
- Paprika -- 1 tablespoon
- Cuminseed -- 1 teaspoon
- Oregano -- 1 teaspoon
- Water or stock -- 1 cup
- Black or green olives (optional), pitted and chopped -- 1/4 cup
- Flour -- 1 tablespoon
Method- Mix the flour, baking powder and salt together in a large bowl. Rub the lard or shortening into the flour with your fingers, breaking it up into small pieces. If using oil, simply stir it in.
- Stir in just enough milk, water or broth to form a kneadable mass. Remove it to a floured work surface and knead for about 5-10 minutes, or until it is silky smooth. Add a little flour if it is too sticky. Cover it with a towel or bowl and let it rest at least 30 minutes.
- While the dough is resting, heat the oil in a sauté pan over medium flame. Sauté the onions until they are translucent, 3-4 minutes. Add the garlic, paprika, cuminseed and oregano and sauté 1-2 minutes more. Add the ground pork, salt and pepper and sauté, breaking up the beef until it is cooked through, 5-7 minutes.
- Stir in the water or stock, olives and bring to a simmer. Sprinkle flour over all and stir in well. Simmer for another 5-8 minutes, or until lightly thickened. Adjust seasoning, remove from heat and set aside to cool.
- Preheat oven to 375°F. Cut the rested dough into 12 equal portions. Lightly flour a work surface and roll each portion out into a 6- to 8-inch round. Add about 1/4 cup of filling to the center of the pastry round, leaving a 1/2-inch border. Wet the edges with a finger dipped in water, fold over into a half moon and seal the edges with the tines of a fork or by rolling them up into a scalloped edge. Lay out on a baking sheet.
- Brush tops with an egg beaten with a little water if you like. Bake for 30-40 minutes until browned on top. Serve warm.
Flan
Ingredients
- 1 cup white sugar
- 3 eggs
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 fluid ounce) can evaporated milk
- 1 tablespoon vanilla extract
Directions- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.
- In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.
- Bake in preheated oven 60 minutes. Let cool completely.
- To serve, carefully invert on serving plate with edges when completely cool.
Pastel De Carne

150 g lb ground beef, lean, cooked
1 tbsp olive oil
10 g green onions, cooked
30 g onion, cooked
10 g red pepper, cooked
10 g parsley
1 cloves garlic
50 g carrots, shredded, cooked
50 g red cabbage, cooked
80 g broccoli, cooked
75 g tomato sauce
75 g mozzarella
1/3 cup Parmesan cheese
Directions

- cook seperately and then add layers of meat and vegetable. top with tomato sauce and cheese.
- Cook in oven for 20 minutes
Nisperos de Batata
2 lbs white sweet potatoes
1 1/2 quarts (6 cups) water
1 teaspoon salt
2 large ripe coconuts, to make 3/4 undiluted coconut milk
3 cups sugar
- 1 eggs yolk
ground cinnamon
whole cloves
Directions Scrub, cut into pieces, and wash sweet potatoes. Boil in water and salt, over moderate heat, covered, about 40 minutes, our until fork-tender. Drain, peel, and immediately put through a ricer.
